Carrot Cake with Cream Cheese Frosting



  1. Cake:
    ● Mix eggs, sugar and corn oil in a large bowl
    ● In another bowl, whisk together the cinnamon, baking soda, baking powder, salt and nutmeg
    ● Once combined, incorporate the dry ingredient mixture slowly into the wet ingredients (eggs, sugar, and corn oil) while mixing
    ● Stir carrots into the batter
    ● Grease baking pan
    ● Bake at 350º Fahrenheit for 35-40 minutes or until a toothpick comes out clean after inserted in the middle of the cake
    ● Cool for 10 minutes or more until cake is cool to the touch, and then prepare to frost
  2. Frosting:
    ● Combine butter and cream cheese until fluffy
    ● Gradually beat in confectioners’ sugar and vanilla
    ● Add milk
    ● Mix until desired consistency is reached for spreading
    ● Spread on top of cooled cake
    ● Optional: top with your choice of chopped nuts, a sprinkle of cinnamon or baking spice, or serve delicious as is!
